Mushroom Season in Newfoundland

Matthew Swift, chef at Terre Restaurant in St. John’s, loves wild mushrooms. And that's a good thing since Newfoundland, his province of adoption, is the perfect place to learn about mycology.

He was asked him a few questions about mushrooms.

Have you ever been foraging for mushrooms in Newfoundland?

Yes, I like to go pick some mushrooms myself. I try to go every year or so, but I must admit that I have been very busy recently. Besides, I would never be able to harvest enough to fulfill all of the restaurant’s needs, so I rely on local producers who supply me with beautiful hand-picked mushrooms.

What kinds of mushrooms are found in Newfoundland?

There are several and I recommend that you do your research before you start foraging to make sure you're picking species that are edible and non-toxic.

The chanterelle season is very fruitful in the fall. Then the winter chanterelle season will come, which is known to withstand the first frosts.

Thanks to Newfoundland's temperate climate, the mushroom season can stretch from late spring until November or even December.

Is mushroom picking popular in Newfoundland?

It is more and more, yes, but people have been interested in mycology for a long time here. There is certainly a resurgence in popularity for this activity since we have large green spaces and mushroom foraging is very accessible.

Can we pick mushrooms near St. John’s?

There are places to pick your mushrooms all over the province and some without having to go too far from St. John's. However, once you find your patch, you tend to keep it secret in order to protect the plant. You only take what you need and you have to leave the little mushrooms that are not ripe yet. It is vital to keep the mushroom healthy.

How do you like to cook wild mushrooms?

I like them as they are, as mushroom are already very tasty. I usually sauté them in some butter, wine and shallots. It’s a very simple dish, but very tasty.
