Gourmet Series: gastronomic events in our hotels

This fall, get ready for two exceptional culinary events, where fine dining meets local, seasonal ingredients. Experience our unique gastronomic series at our Ottawa, Montreal and Charlevoix locations, Under the banner of our Gourmet Series, we celebrate the bounty of harvests and the talent of local chefs. 

Champs Libres is back!

From October 10 to December 5, top guest chefs will again take over Les Labours restaurant to create unique menus accompanied by chef Patrick Dubé's team.

For this latest edition, we will turn our focus to the harvest and celebrate the end of the season of abundance with delicious products from our magnificent gardens.

In keeping with this theme, each evening will be different, just like the talented chefs who make up the program. Once again, they will be given free rein to create a 5-course seasonal menu based on the finest Charlevoix products. Food and wine pairings will be selected from our prestigious wine cellar by our sommelier Christian Beaupré and live music will be featured on site.

Florimond Hannoteau – Le Boulevardier

The program kicks off with Florimond Hannoteau, Executive chef of the French restaurant Le Boulevardier located in Le Germain Hotel Montreal. A native of Lille and prodigiously self-taught, he describes his style as that of a bon vivant who likes to put his heart into his dishes. What to expect? The freshness of local products and a land-and-sea approach that he's particularly fond of. You won’t want to miss it!

Nikolas Couture – Louise Taverne & Bar à vin

Having made his mark at several renowned addresses in Quebec City and Montreal, Nikolas Couture is now making waves at Louise Taverne & Bar à Vin in Old Quebec City. Executive chef and co-owner of the establishment, he enjoys serving local meats and vegetables in a friendly atmosphere that he will bring with him to Baie-Saint-Paul.

Sabrina Lemay – L’Orygine

In the heart of Quebec City's Petit Champlain district, L'Orygine is an ode to local plant products and modern cuisine. With a culinary approach that is “like an exchange”, Executive chef and co-owner Sabrina Lemay transforms Quebec vegetables into vegetarian and even vegan dishes that will delight the tastebuds. The encounter between this prodigious chef from Shawinigan and our gardens promises to be a colourful one, with dishes full of flavour!

David Forbes – Camp Boule -buvette de montagne

David Forbes has taken refuge at the top of Le Massif mountain and opened Camp Boule, which overlooks Charlevoix and the St. Lawrence. As Executive Chef and co-owner, he highlights the work of the region's artisans, but also, and above all, that of nature itself. He works with the utmost respect for products and the rhythm of the seasons and doesn't hesitate to showcase the forest products that surround him. Plates full of freshness and wonderful discoveries are in store!

Alexandre Vachon - Manoir Hovey

Franco-Canadian chef Alexandre Vachon needs no introduction. Now at the helm of the Manoir Hovey restaurants - Le Hatley and Bistro Tap Room - located in North Hatley in the Eastern Townships, he draws on classic cuisine to create contemporary dishes that capture emotions. Inspired by the terroir, he explores flavours in an attempt to make his guests rediscover their culinary memories in what promises to be a grandiose evening!

Chef Jean Philippe Cloutier x Le Germain Hotel: excellence on the menu for three evenings

This fall, the winner of the TV show Le Restaurant, broadcast on Zeste and TVA, will be visiting three of our Le Germain Hotels to concoct an exclusive six-course menu with food and wine pairings - non-alcoholic beverage options also available.
